Ingredients

  • ½ cup cherries, pitted and halved
  • 1 peach, thinly sliced (about 1 cup)
  • ¼ cup coconut sugar (for topping)
  • 4 Tbsp grass-fed butter (for topping)
  • 2 cups almond flour/meal
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ tsp almond extract
  • ½ tsp pure vanilla extract
  • 1 cup coconut sugar (for cake batter), or honey
  • 5 eggs, large
  • 6 Tbsp melted coconut oil

Instructions

  1. Preheat your oven to 350˚F (175˚C). Lightly butter the sides of a 9-inch round cake pan. Place the buttered cake pan on your stovetop over very low heat.
  2. Melt 4 tablespoons of butter directly in the cake pan. Once melted, add ¼ cup of coconut sugar (or brown sugar) and stir until it’s well combined and slightly bubbly. Spread this luscious butter-sugar mixture evenly over the bottom of the pan and immediately remove it from the heat.
  3. While the caramel mixture is still warm and hasn’t set, arrange your thinly sliced peaches and halved cherries over it. Place them cut-side-down for a beautiful presentation, gently pressing them into the mixture to ensure they stick. Set the pan aside.
  4. Preparing the cake pan with butter, sugar, peaches, and cherries for an upside-down cake.
  5. In a medium bowl, whisk together 2 cups of almond flour, 1 teaspoon of baking powder, and ¼ teaspoon of salt. Make sure these dry ingredients are thoroughly combined.

  13. Allow the cake to cool in the pan for 10 minutes. This crucial cooling time allows the caramel topping to set slightly and the cake to firm up, preventing it from breaking when inverted.
  14. After 10 minutes, run a dull knife around the edges of the cake to loosen it from the pan. Place your serving platter over the cake pan and, holding both firmly together, carefully invert the cake directly onto the platter. Let it stand for another 5 minutes, allowing any remaining caramel to drip down and fully release the fruit.
