Why You’ll Love This Instant Pot Pulled Pork Recipe
There are countless reasons why this Instant Pot BBQ Pulled Pork will quickly become a staple in your culinary repertoire:
- Unbelievably Easy Preparation: Forget complicated techniques or endless hours hovering over the stove. This Instant Pot Pulled Pork recipe is designed for maximum flavor with minimal effort. Simply apply the robust spice rub to your pork, sear it for an extra layer of depth, and let your pressure cooker work its magic. The hands-on time is incredibly short, making it perfect for busy weeknights or when you want a satisfying meal without the fuss.
- Perfect for Meal Prep and Freezer-Friendly: Cooking a larger batch of this shredded pork is highly recommended, as it stores beautifully. It’s an ideal candidate for weekly meal prep, providing a versatile protein base for lunches and dinners throughout the week. Plus, it freezes exceptionally well, allowing you to stock your freezer with delicious, ready-to-reheat meals for those days when cooking from scratch just isn’t an option.
- Remarkably Faster Cooking Time: Traditional pulled pork often requires 5 to 8 hours in an oven or slow cooker to achieve that desirable fall-apart tenderness. The Instant Pot dramatically slashes this cooking time, delivering perfectly cooked, succulent pulled pork in just about an hour of pressure cooking. This means you can enjoy authentic BBQ flavor without the extensive planning, making it accessible even on spontaneous cravings.
- Consistently Tender and Juicy Results: The high-pressure environment of the Instant Pot ensures that every fiber of the pork becomes incredibly tender and infused with flavor, locking in moisture unlike any other cooking method. You’ll be amazed at how easily the pork shreds, practically dissolving under your forks.
- Versatile Serving Options: While classic BBQ sandwiches are a given, this pulled pork’s adaptability is a huge selling point. Use it in tacos, quesadillas, loaded baked potatoes, mac and cheese, salads, or even as a pizza topping. It’s a culinary canvas ready for your creativity.
Essential Ingredients for Your Perfect Instant Pot Pulled Pork
Crafting truly delicious pulled pork begins with selecting the right ingredients. Here’s a detailed look at what you’ll need for this pressure cooker sensation, along with helpful tips and substitution ideas:
- For the Pulled Pork Spice Rub: This homemade rub is the secret to a deeply flavored crust and incredible aroma. It’s a balanced blend of:
- Brown Sugar: Adds a touch of sweetness that caramelizes beautifully during searing, creating a rich crust. Coconut sugar is a great alternative.
- Chili Powder: Provides a mild warmth and earthy depth.
- Paprika: Contributes vibrant color and a smoky, slightly sweet flavor (smoked paprika can amplify this).
- Ground Mustard: A classic BBQ seasoning that adds a sharp, tangy note.
- Garlic Powder & Onion Powder: Essential aromatics that offer concentrated flavor without the moisture of fresh garlic or onion.
- Ground Cumin: Brings a warm, distinctive, slightly peppery kick.
- Salt and Black Pepper: Fundamental seasonings to enhance all other flavors.
- Pork Cut: The choice of pork cut is crucial for tender, shreddable results. I highly recommend using Boston Butt, also known as pork butt or pork shoulder. These cuts are well-marbled with fat and connective tissue, which break down beautifully under pressure, yielding incredibly moist and flavorful shredded pork. Boneless pork roast can also work, but ensure it has enough fat content to remain juicy. Always remember to trim any excessive, thick fat cap before cooking, leaving a thin layer for flavor.
- Oil for Searing: A good quality cooking oil, such as olive oil, vegetable oil, or avocado oil, is needed for browning the pork. Searing is a vital step that creates a delicious crust and locks in the meat’s juices, building a foundational layer of flavor.
- Liquid Base (Stock): I prefer using chicken stock as it adds another layer of savory flavor to the cooking liquid. However, vegetable stock can be used for a slightly lighter flavor profile, or plain water will suffice if you’re focusing solely on the pork and BBQ sauce. The liquid is essential for pressure building in the Instant Pot and preventing a “burn” notice.
- BBQ Sauce: This is where personal preference truly shines! Use your absolute favorite brand of BBQ sauce. Whether you prefer sweet, tangy, smoky, or spicy, the choice is yours. My personal go-to is Stub’s Original BBQ sauce for its balanced flavor profile. You’ll need some for cooking and extra for serving.
- Apple Cider Vinegar: A splash of apple cider vinegar introduces a bright, tangy acidity that cuts through the richness of the pork and balances the sweetness of the BBQ sauce, adding complexity to the overall flavor.
- Worcestershire Sauce: This savory condiment adds an umami depth and a subtle fermented tang, enhancing the overall savory profile of the pulled pork and complementing the other flavors in the sauce.
- Liquid Smoke: To truly capture that authentic, slow-smoked BBQ flavor without a smoker, liquid smoke is a game-changer. While optional, I highly recommend including it for that distinctive smoky essence. A small amount goes a long way to infuse your pulled pork with a depth of flavor that mimics hours on the grill.

Step-by-Step Guide: Crafting Your Instant Pot Pulled Pork
Follow these simple steps to create incredibly flavorful and tender pulled pork in your Instant Pot:
- Prepare the Spice Rub: In a small bowl, combine all the dry spice rub ingredients (brown sugar, chili powder, paprika, ground mustard, garlic powder, onion powder, ground cumin, salt, and black pepper). Stir them thoroughly until they are well mixed and uniform. This ensures an even flavor distribution on your pork.
- Season the Pork: Generously rub the entire surface of the pork roast with the prepared spice mixture. Use your hands to really work the rub into every crevice, ensuring all sides are coated. This step is crucial for building a flavorful crust and seasoning the meat deeply.
- Sear for Flavor: Pour the olive oil into the Instant Pot’s inner pot. Select the “SAUTE” mode and allow the pot to heat until the oil shimmers. Carefully place the seasoned pork into the hot pot and sear it on all sides until a rich, golden-brown crust forms. This browning step, known as the Maillard reaction, adds immense depth of flavor. If your pork cut is large, sear it in two batches to avoid overcrowding, which can steam the meat instead of browning it. Transfer the seared pork to a clean plate once done.
- Deglaze the Pot & Build the Sauce: Pour about half of the chicken stock into the hot Instant Pot. Immediately use a rubber spatula or wooden spoon to scrape up all the browned bits (fond) from the bottom of the pot. This deglazing step is vital for two reasons: it incorporates incredible flavor into your sauce, and it prevents a “burn” warning during pressure cooking. Once deglazed, add the remaining broth, 1 cup of your favorite barbecue sauce, apple cider vinegar, Worcestershire sauce, and liquid smoke. Stir everything together until well combined.
- Pressure Cook the Pork: Carefully return the seared pork pieces to the Instant Pot, nesting them into the liquid. Secure the lid on the Instant Pot, ensuring it’s properly sealed. Turn the steam release valve to the ‘Sealing’ position. Select the “PRESSURE COOK” or “MANUAL” setting on high pressure and set the cooking time for 60 minutes. (Remember to adjust this time based on the weight of your pork, aiming for approximately 20 minutes per pound.)
- Natural Pressure Release: Once the pressure cooking cycle is complete, resist the urge to immediately open the lid! Allow the pressure to release naturally for 20 minutes. This “Natural Pressure Release” (NPR) is crucial for tenderizing the meat and preventing it from becoming tough. After 20 minutes, carefully turn the steam release valve to the ‘Venting’ position to quick release any remaining pressure. Once the float valve drops, it’s safe to open the lid.
- Shred and Combine: Transfer the cooked pork to a large bowl. Using two forks, easily shred the tender pork. It should be so soft that it practically falls apart. Return the shredded pork to the flavorful sauce remaining in the Instant Pot and stir to thoroughly coat. Taste and add more BBQ sauce if you desire a saucier consistency or extra flavor.
- Serve and Enjoy: Pile the delicious, saucy pulled pork onto warm burger buns. Top with additional barbecue sauce, coleslaw, pickles, or your favorite toppings as desired. This versatile dish is ready to be devoured!

EXPERT TIPS FOR INSTANT POT BBQ PULLED PORK
Recipe Notes and Pro Tips for Instant Pot Pulled Pork Perfection
Achieving the best possible pulled pork is easy with these expert tips and considerations:
- Maximize Flavor with the Spice Rub: The spice rub is foundational to the flavor of your pulled pork. Don’t be shy! Apply it generously and massage it into all sides of the pork with your hands. For even deeper flavor, you can apply the rub an hour or even overnight before cooking, allowing the spices to penetrate the meat.
- Properly Size Your Pork: If you’re working with a large Boston Butt (3 lbs or more), it’s highly recommended to cut it into 3 or 4 smaller, manageable pieces. This not only ensures the meat fits comfortably in your Instant Pot but also allows for more even cooking and easier searing.
- Never Skip the Searing Step: Searing the pork before pressure cooking is a non-negotiable step for truly flavorful pulled pork. This process creates a delicious caramelized crust on the outside of the meat, locking in juices and adding a layer of rich, savory “umami” that cannot be achieved with just pressure cooking.
- Adjust Cooking Time by Weight: The general rule of thumb for pressure cooking pork butt or shoulder is approximately 20 minutes per pound. So, a 3lb roast will cook for 60 minutes. Always adjust your cooking time based on the exact weight of your pork to ensure it reaches that perfect fall-apart tenderness.
- The Importance of Natural Pressure Release (NPR): After the cook time, a full 20-minute Natural Pressure Release (NPR) is crucial. This gradual release of pressure allows the meat to rest and reabsorb its juices, resulting in significantly more tender and moist pulled pork. Rushing this step with a quick release can lead to drier, tougher meat.
- Trim Excess Fat Wisely: While pork butt needs some fat for flavor and moisture, trim off any overly thick fat caps before cooking. This prevents the final dish from being overly greasy and allows the spice rub to adhere better to the meat.
- Don’t Skimp on Deglazing: After searing, make sure to thoroughly deglaze the pot with some stock, scraping up all the browned bits from the bottom. This prevents a “burn” notice during pressure cooking and adds fantastic flavor to your sauce.
- Taste and Adjust Seasoning: Once the pork is shredded and mixed back into the sauce, always taste and adjust seasonings. You might want to add a bit more BBQ sauce, a pinch of salt, a dash of vinegar, or a touch more liquid smoke to suit your preference.
Instant Pot Pulled Pork: Understanding Cooking Times
The precise cooking time for your Instant Pot pulled pork hinges on the weight of your pork roast. A general guideline is to cook your pork on high pressure for approximately 20 minutes per pound. For instance, a 3-pound pork butt will require 60 minutes of high-pressure cooking.
It is absolutely crucial to adjust this time based on the exact weight of your meat to ensure it achieves that perfect fall-apart tenderness. Additionally, the post-cooking process is just as important as the cooking itself. After the pressure cooking cycle finishes, you MUST allow for a natural pressure release (NPR) for at least 20 minutes. This natural depressurization period is essential for the meat’s texture; it allows the muscle fibers to relax and reabsorb juices, resulting in incredibly moist and tender pork. Do not be tempted to quick release the pressure before this 20-minute period, as doing so can lead to tougher, drier meat and potentially unevenly cooked sections, especially with larger cuts.

Storage Solutions: How Long Does Instant Pot Pulled Pork Last?
One of the fantastic benefits of this Instant Pot BBQ pulled pork is its excellent keeping qualities, making it ideal for meal prepping throughout the week. Once the pork has been thoroughly cooked and shredded, ensure it cools down completely to room temperature before storing. Transfer the cooled pulled pork, along with its savory sauce, into an airtight container. When stored correctly in the refrigerator, it will maintain its delicious flavor and quality for up to 4 days.
Reheating Instructions: To reheat, simply place the desired portion of pulled pork in a pot or skillet over medium-low heat on the stovetop. Add a splash of broth or water if it appears dry, and stir occasionally until it’s warmed through. You can also microwave individual servings in short intervals, stirring in between, until heated to your liking.
Freezing for Future Feasts: Instant Pot Pulled Pork
Absolutely! This Instant Pot Boston Butt recipe is perfect for stocking your freezer with convenient, ready-to-use meals. Freezing pulled pork is a fantastic way to save time on future cooking and ensure you always have a delicious option on hand. To freeze, divide the completely cooled pulled pork (with its sauce) into individual or family-sized portions. Place these portions into heavy-duty freezer-safe ziplock bags, ensuring you press out as much air as possible before sealing. Alternatively, use airtight freezer-safe containers.
Properly stored, your frozen pulled pork will maintain its quality for up to 4 months. When you’re ready to enjoy it, simply transfer the frozen pork to the refrigerator and allow it to thaw overnight. Once thawed, reheat it gently on the stovetop or in the microwave until thoroughly warmed, adding a little extra BBQ sauce or broth if needed to restore moisture.
