Homemade Mexican Chocolate Pumpkin Seed Biscotti dipped in melted chocolate and sprinkled with sea salt. Holiday perfection in every crunchy bite.

Ingredients
- 2 1/4 cups all-purpose flour, plus extra for hands and counter
- 1/2 cup light brown sugar
- 1 tablet Abuelita Mexican chocolate, pulverized in a blender or food processor
- 1/4 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/2 tsp salt
- 3 large eggs
- 1/4 cup + 1 tbsp coconut oil, melted
- 1 tsp vanilla extract
- 1 cup roasted and unsalted pumpkin seeds (pepitas)
- 1 tbsp egg wash (prepared by beating 1 large egg with 1 tbsp milk)
- 8 ounces milk chocolate chips
- Coarse sea salt for topping (optional, but highly recommended)
Instructions
- Preheat your oven to 350°F (175°C). Prepare a large baking sheet by lining it with parchment paper, then set it aside.
- In a spacious mixing bowl, combine all the dry ingredients: all-purpose flour, light brown sugar, finely pulverized Mexican chocolate, unsweetened cocoa powder, baking powder, ground cinnamon, and salt. Whisk them together until they are thoroughly mixed.

- Transfer the slightly cooled log to a cutting board. Using a sharp serrated knife, carefully cut the biscotti log into 1-inch thick slices.
- Arrange the sliced biscotti pieces back onto the baking sheet, making sure they are standing on their cut sides facing upwards. Return them to the oven and bake again for 10 minutes to further dry them out.
- After the first 10 minutes of the second bake, flip each biscotti slice over to its other cut side. Continue to bake for an additional 10 minutes, or until the biscotti are golden brown, crisp, and completely dried through.
- Once the second baking is complete, remove the biscotti from the oven and transfer them to a wire rack. Allow them to cool completely. Thorough cooling is absolutely essential for achieving the characteristic crisp and snappy texture of biscotti.
