Ingredients

For the Hash

  • 2 tablespoons olive oil
  • 1/2 large onion, diced
  • 2 medium sweet potatoes, peeled and diced
  • 1 teaspoon minced garlic, about 1 clove
  • 1 teaspoon paprika

  • 1/2 pound Mexican chorizo

For the Eggs

  • 4 eggs (or more, depending on how many eggs each person wants)
  • water (enough to place the steamer basket in)

Instructions

For the Hash

  1. In a large skillet over medium-high heat, add olive oil, diced onions, sweet potatoes, minced garlic, paprika, dried rosemary, dried sage, and ancho chili powder. Cook for 12 minutes, stirring occasionally, until the sweet potatoes start to soften and the onions caramelize slightly.
  2. Add the Mexican chorizo, breaking it up with a spoon, and the chopped kale to the skillet. Continue to cook for another 12 minutes, or until the chorizo is fully cooked through and the kale has wilted down. Stir frequently to ensure even cooking.
