  • 1 medium onion, chopped

  • In a large cast iron skillet, brown the sausage over medium-high heat, breaking it up with a spoon as it cooks. Once fully cooked, transfer the sausage to a plate, leaving any rendered fat in the skillet.
  • Reduce the heat to medium-high. Add 1 tablespoon of coconut oil to the skillet (if needed) and add the chopped onions. Sauté, stirring occasionally, until the onions become translucent and slightly softened, about 3-5 minutes. Transfer the sautéed onions to the plate with the sausage.
  • Add another 1 tablespoon of coconut oil to the skillet over medium-high heat. Add the chopped sweet potatoes and cook, stirring occasionally, until they are tender and slightly caramelized, which usually takes about 10 minutes. Sprinkle some rosemary, salt, and pepper over the sweet potatoes during this stage. Cover the skillet with a lid while cooking to help them steam and soften more quickly.
