  • 1/2 medium onion, diced
  • 2 teaspoons minced garlic
  • 8 ounces cream cheese, softened
  • 8 ounces sour cream
  • 1 cup shredded Mexican-blend cheese
  • 1 teaspoon kosher salt
  • 1 tablespoon lime juice (about 1/2 lime)

  8. Heat 1 tablespoon of butter in a small skillet over medium-high heat. When melted, add corn, onion, and garlic. Sauté for 8 minutes, stirring occasionally, until onions have softened.
