Ingredients

  • 2 teaspoons minced garlic (about 4 cloves)
  • 1 poblano pepper diced
  • 1 pound lean ground beef
  • 3 tablespoons homemade taco seasoning (or store-bought)
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can whole kernel yellow corn, drained and rinsed
  • 1 (15-ounce) can diced tomatoes
  • 2 tablespoons lime juice (about the juice of 1 lime)
  • 12 corn tortillas
  • 4 cups shredded Monterey Jack cheese
  • For topping: chopped cilantro and sour cream

Instructions

  • Preheat oven to 375°F (190°C). Grease a 3-quart 13×9-inch baking dish with cooking spray and cut 9 of the corn tortillas in half. Set aside.
