Ingredients and Substitutions
- Polska Kielbasa smoked sausage – I used smoked Polska Kielbasa in this cabbage and sausage recipe but you can swap it with another meat – ground beef, ground sausage, chicken, or turkey sausage if that is what you prefer. Andouille sausage (if you like itspicy), German sausage, or bratwurst are great alternatives as well.
- Cabbage – I like the cut the cabbage coarsely for better texture and flavor.
- Vegetables – I added red bell peppers, onion, carrots, and garlic but you can also add other vegetables like mushrooms, tomatoes, and beans if that is what you prefer.
- Seasonings: Salt and freshly ground black pepper. You can also add other spices like paprika, oregano

Expert Tips & Recipe Notes
- Get a good sear on the sausage – Browning the sausage first adds incredible depth of flavor. Don’t rush it – let it develop a nice golden crust before removing it from the skillet.
- Cut veggies evenly – To ensure everything cooks at the same rate, slice the cabbage and other veggies into uniform pieces. This helps with even tenderness and better texture.
- Don’t skip the cover! – Cover the skillet while cooking to trap moisture, this will help the cabbage soften beautifully without drying out. Remove the foil at the end to allow it to get a little caramelization.
- Use a Staub or cast iron skillet – A high-quality cast iron skillet retains heat well and gives the best flavor development. And it’s oven safe. Staub cast iron skillet is what I have and highly recommend, it will last a lifetime.
- Customize it! – Add a pinch of smoked paprika for extra warmth, a splash of apple cider vinegar for a tangy kick, or red pepper flakes if you like a bit of heat.

Serving Suggestions
This Sausage and Cabbage recipe is a hearty meal on its own, but it also pairs beautifully with a few simple sides! Serve it over buttery mashed potatoes or fluffy rice to soak up all the flavorful juices. A slice of crusty sourdough bread is perfect for scooping up every last bite. For a fresh contrast, pair it with a simple cucumber salad or some green beans. And if you’re feeling extra cozy, a dollop of sour cream or Dijon mustard on the side takes it to the next level!
