Many no-bake recipes featuring a peanut or almond butter center often call for powdered sugar to achieve the desired thick consistency. While undeniably delicious to many, I frequently find such additions make the dessert overly sweet. Driven by a desire for a naturally sweetened, healthier alternative, I turned to my pantry for inspiration, and this incredibly simple yet satisfying recipe was born.

The Magic of 3 Simple Ingredients for These Healthy Chocolate Covered Almond Butter Balls

Creating these delightful almond butter balls couldn’t be simpler. You only need three accessible ingredients, proving that healthy and delicious can indeed go hand-in-hand.

  • Almond Butter: The creamy, nutty base that provides healthy fats and protein.
  • Coconut Flour: A fantastic gluten-free alternative that absorbs moisture and helps bind the mixture without the need for added sugars.
  • Chocolate Chips: For that irresistible outer shell, offering a rich, sweet contrast.

That’s truly it! The process begins by simply mixing the almond butter and coconut flour. You’ll quickly notice a thick, pliable almond butter paste forming, and just like that, you’re two-thirds of the way to enjoying these incredible treats. There’s no need for any powdered sugar or butter, keeping the recipe clean and wholesome.

Achieving the perfect ratio of coconut flour to almond butter was key. After several trial batches, I finally received the coveted “stamp of approval” from my husband, who is, without a doubt, the resident chocolate and nut butter enthusiast. His endorsement solidified my confidence: these are truly excellent!

Choosing the Right Ingredients for Optimal Flavor and Texture

  • Almond Butter: Opt for natural, unsweetened almond butter where the only ingredient is almonds. The oil separation is normal and often desired as it contributes to the final texture. If your almond butter is very firm, gently warm it slightly to make it more pliable for mixing.
  • Coconut Flour: This unique flour is highly absorbent. Its role here is crucial for thickening the almond butter without adding bulk or a powdery texture. Remember, a little goes a long way! Do not substitute coconut flour with other flours like almond flour or all-purpose flour, as their absorbency rates are vastly different.
  • Chocolate Chips: The choice of chocolate can truly elevate these healthy dessert bites. Dark chocolate chips (70% cacao or higher) will offer a richer, less sweet experience, aligning with a paleo or refined sugar-free approach. For a sweeter treat, semi-sweet or milk chocolate chips work wonderfully. Ensure your chocolate chips are vegan if adhering to a plant-based diet. You can also use a chocolate bar, finely chopped, for melting.

Elevate Your No-Bake Treats: Creative Toppings and Flavor Variations

One of the most enjoyable aspects of these simple almond butter balls is the endless array of toppings and flavor variations you can explore! While my personal favorite is a delicate sprinkle of sea salt to enhance the chocolate’s richness, my husband John absolutely adores them with colorful sprinkles. The possibilities are truly boundless, allowing you to customize each batch to your preference. Here are some inspiring ideas to get you started:

  • Sea Salt: A classic for a reason! Flaky sea salt provides a beautiful contrast to the sweet chocolate.
  • Citrus Zest: Finely grated lime zest or orange zest adds a bright, refreshing zing that cuts through the richness.
  • Espresso Powder: A tiny pinch can deepen the chocolate flavor, adding a sophisticated touch.
  • Shredded Coconut: Toasted or untoasted shredded coconut flakes add a tropical flavor and delightful texture.
  • Crushed Cookies: For a decadent twist, crushed up cookies (like Oreos for a vegan option, or your favorite gluten-free cookies) offer a playful crunch.
  • Chopped Nuts: Finely chopped almonds, peanuts, pistachios, or walnuts add extra crunch and nutty flavor.
  • Dried Fruit: A sprinkle of finely diced dried cranberries, cherries, or apricots can add a chewy texture and tart sweetness.
  • Spice it Up: A tiny pinch of cinnamon, nutmeg, or even a dash of cayenne pepper (for a Mexican hot chocolate vibe) can infuse unique flavors into the almond butter base or chocolate coating.
  • Extracts: A few drops of vanilla extract, almond extract, peppermint extract, or orange extract can be mixed into the almond butter paste before rolling for an added layer of flavor.

  • Diet-Friendly Versatility: Whether you’re following a gluten-free, grain-free, paleo, vegetarian, or vegan diet, these treats fit right in. Their simple, wholesome ingredients ensure they accommodate a wide range of dietary preferences and restrictions.

  • Kid-Friendly: Kids love these! They’re a much healthier alternative to store-bought candies and a fun way to get some healthy fats and protein into their diet. Involve them in the rolling and decorating process for a fun kitchen activity.
  • Energy Boosting: Packed with healthy fats from almond butter and a touch of protein, these balls provide sustained energy, making them excellent energy bites for a mid-day slump or a pre-workout boost.

Tips for Perfect Chocolate Covered Almond Butter Balls Every Time

  • Consistency is Key: The “Notes” section in the recipe card details this, but it’s worth reiterating. The quality and oiliness of your almond butter can vary. If your mixture is too soft and won’t hold its shape, add coconut flour one teaspoon at a time until it’s firm enough to roll. If it’s too dry and crumbly, add a tiny bit more almond butter. This is the most crucial step for success!
  • Chill Thoroughly: Don’t skip the freezing steps. Chilling the almond butter balls before dipping ensures they hold their shape and helps the chocolate coating set quickly and smoothly.
  • Melting Chocolate: Melt chocolate chips gently. Microwave in 30-second intervals, stirring well after each, until smooth. Overheating chocolate can cause it to seize and become unusable. Alternatively, use a double boiler for a more controlled melting process.
  • Dipping Technique: Use a fork or a small spoon to dunk the chilled balls into the melted chocolate. Allow excess chocolate to drip off before placing them back on parchment paper. This creates a thin, even coating.
  • Setting the Chocolate: The final chill in the freezer is essential for the chocolate to set firm and glossy.

Storage Recommendations

These chocolate covered almond butter balls are best stored in an airtight container in the refrigerator for up to 1-2 weeks. For longer storage, you can freeze them for up to 1-2 months. If freezing, allow them to thaw slightly at room temperature for a few minutes before enjoying, or eat them straight from the freezer for a firmer, chewier treat!

Chocolate Covered Almond Butter Balls

By: Isabel Orozco-Moore
These chocolate covered almond butter balls are made with only 3 ingredients and are the perfect healthy dessert! (gluten free, grain free, paleo, vegetarian, vegan)
Prep: 30
Total: 30
Servings: 12 balls

Ingredients

  • 3/4 cup almond butter
  • 1/4 cup coconut flour
  • 1 cup chocolate chips
  • optional toppings: sea salt, lime zest, sprinkles

Instructions

  • Line a large baking sheet with parchment paper and set aside.
  • In a medium bowl, mix together almond butter and coconut flour until a thick paste forms.
  • Scoop a heaping teaspoon of the mixture onto a baking sheet covered with parchment paper or form the mixture into a ball using your hands. I used a small cookie scoop like this one. Continue until all the mixture is used.*
  • Place the baking sheet in the freezer for 15 minutes.
  • Melt the chocolate chips in a microwave-safe bowl in 30-second increments until the chocolate is completely melted. Stir well after each interval.
  • Using a spoon or fork, dunk the cold almond butter balls into the melted chocolate, making sure to fully cover every side.
  • Place the chocolate covered balls back onto the parchment paper and top with desired toppings.
  • Place the balls back into the freezer for 10 minutes or until chocolate has set.

Notes

You may need to add more coconut flour if the mixture isn’t staying in the ball shape or more almond butter if the mixture is too stiff and dry. Almond butter made with only almonds and nothing else tends to be a little more oily than other almond butters due to natural separation. If that’s the case, simply add 1 more teaspoon of coconut flour at a time until the mixture is no longer too soft and can be easily rolled into balls.
